INGREDIENTS FOR 1 1 cup cooked quinoa 1 tablespoon extra-virgin olive oil 1 egg 1/2 avocado 1 small butternut squash or pumpkin 1 lemon Salt and pepper PREPARATION 1. Preheat the oven to 180C / 350F. 2. Peel the pumpkin and cut into slices. 3. Place in a baking dish with olive oil and salt and roast for 15 minutes. 4. Heat 3 cups water in a pot and bring to a boil. 5. Once the water boils, cook the egg for exactly 5 minutes. 6. Remove from water and put in cold water to stop the cooking process. 7. Season with olive oil, salt and pepper. 8. Slice the avocado, peel the egg and pick the bowl in which you are serving. Place all ingredients in the bowl. Season with lemon juice, salt and pepper to taste and enjoy immediately.
