INGREDIENTS 2 eggs 1 sweet potato 3/4 chives 6 mushrooms 1 tablespoon ghee or coconut oil 1 teaspoon sea salt Pepper to taste PREPARATION 1. Cut sweet potatoes in wedges and slice shiitake mushrooms. 2. Chop the shallots. 3. Heat a cast iron skillet over medium-high heat with 1 tablespoon ghee. 4. Add mushrooms, shallot and sweet potatoes, sauté with salt and pepper, lower heat slightly and cover for 5-7 minutes. 5. Break 2 eggs into the pan, salt to taste, cover for 3 more minutes. 6. Serve immediately! Enjoy for breakfast, lunch or dinner!
