INGREDIENTS WAFFLE MIX 2 cups of gluten-free flour 1 egg 1/4 cup of muenster cheese (you can use your favorite cheese) 1 teaspoon salt 1 teaspoon baking powder 2 tablespoons of Greek yogurt 1 tablespoon of olive oil 1 tablespoon of melted ghee AVOCADO MASH 1 avocado or avocado 1 tablespoon of mustard 1 teaspoon salt 1/2 lemon juice 1 teaspoon olive oil 1 teaspoon pepper Cilantro, to serve (optional) PREPARATION 1. For the waffle mixture, mix flour, salt, and baking powder in a bowl. 2. In another bowl mix, yogurt, cheese, oil and ghee. 3. Separate the yolk and egg white and beat the egg white until peaks form. Mix in a folding manner into wet ingredients, and then add to the dry ingredients to form the waffle mixture. 4. Heat the waffle maker and cook according to the instructions. To make the avocado mash, mix all ingredients and once ready, taste, and adjust salt and pepper to taste. 5. Spread avocado mash on each waffle. Add more salt and pepper to taste and enjoy immediately
