The most common problem with 70% of chia pudding recipes out there is texture. Chia pudding should stay on the spoon. Toppings should not sink in. This recipe specifically focuses on THE texture and the amount of protein! Two things to keep in mind: A 4:1 ratio of liquid to chia seeds. So 1 cup liquid to 1/4 cup chia seeds, which is a tiny bit higher than most. A mix of fresh blended coconut water with coconut meat and almond milk (or any milk in a carton). Coconut milk solidifies when chilled, so a mix of both makes it thick but not too thick. Just the perfect pudding texture. Sweetening: The coconut milk is naturally sweet, so you don’t need much. I use 2 tablespoons of honey per batch, and one batch easily makes 3 servings. optional to add 1-2 scoops of plant based protein (which will make it extra foamy and sweeter). Protein powder does make the pudding thicker so consider adding an extra 1/4 cup milk. My 2 personal favorites are vanilla and chocolate because it goes with all the toppings, its so pretty and sweet and mainly a great source of energy. INGREDIENTS 1 cup (240g) almond milk 1 cup (220g) coconut milk 2 tbsp honey (you can substitute maple syrup or agave) 1 scoop Classic Organic Plant-based protein 1/2 cup chia seeds FOR VAINILLA: 1 scoop Vanilla Plant based protein FOR ANTIOXIDANT: 1 scoop organic Raw cacao or chocolate plant based protein BERRY ICE-CREAM 2 cups frozen berries (strawberry, blueberry, raspberries) 2 medjool dates or 2 tablespoons of honey 1/2 cup of cold water EXTRA TOPPINGS Hemp seeds Fresh Banana Fresh raspberries Almonds Pumpkin Seeds Granola Strawberry Jam Greek Yogurt METHOD 1. In a blender combine the coconut milk, almond milk, hojey, and protein powder. Blend until combined. 2. Divide into equal jars and add the vanilla protein to one, cocoa powder or chocolate protein to another, and blend to combine. 3. Add the chia seeds and combine them in. 4. Refrigerate overnight (or at least 4 hours). 5. For the Berry ice-cream combine all ingredients in a blender right before you will serve the chía pudding. 6. Build your chia puddings with toppings of choice and enjoy! FOR VAINILLA: served fresh strawberries, strawberry jam, berry ice-cream, yogurt and granola. FOR COCOA: served with greek yogurt, cacao nut and berries, pumpkin seeds and almonds. NOTES *You can use any kind of non-dairy milk in a carton, but I do not recommend using all canned coconut milk or it will be too thick. **You can sub any liquid sweetener or even 2-3 medjool dates.
